100gms maida(refined wheat flour),
150 gms milk(or as per requirement),
Salt and pepper to taste,
Red chilli powder to taste,
1 tsp chilli sauce,
Vegetables of your choice(approx 1-1 1/2 cup vegetables like green/red pepper, Cabbage, Broccoli or Cauliflower florets, sweet corn, etc)
In a bowl, mix the seasonings into the flour. Beat the egg in a seperate bowl and gradually mix in the flour, followed by the milk and a tbsp oil.
Dice the vegetables and stir evenly into the batter or dip each piece of vegetable and fry one by one.
Heat oil in a frying pan and add a spoonful of mixture at a time to the pan or each veetable one by one, turning to brown evenly.
Drain immediately on kitchen paper and pack loosely in a fresh kitchen towel when completely cold. The idea is to keep the fresh, crisp texture of the vegetables as much as possible.
TIP: Vegetarian who do not eat eggs can replace egg with 2 tbsp rice flour and 1 tsp oil. This would add the crisp to the crispies.
