We usually prepare white sauce using refined wheat flour (in India called as maida) but in this recipe we are using whole wheat flour to make it a healthy meal. This is a complete healthy food for kids or even adults, since it contains all vegetables and requires less oil. You experiment with this recipe using any vegetable of your choice.
Ingredients:
1/2 cup baby corns; each cut into 3 pieces,
1/2 cup mushrooms,
1/2 cup green peas,
1/2 cup cauliflower florets,
1/2 cup French beans; chopped,
1/2 cup carrots; diced,
1/2 cup potatoes; diced,
2 large onions; very finely chopped,
4-5 tbsp wheat flour,
2-3 tsp ginger-garlic paste,
2 tsp green chilli paste,
1 cup hot vegetable stock
1 cup milk,
Salt and pepper to taste,
4-5 cinnamon sticks (dalchini),
8-10 peppercorns (kalimirch),
2-3 tbsp oil or butter,
Grated cheese as per taste.
Method:
Boil all the vegetables in water separately with little salt and set aside. Use this water as vegetable stock.
Heat a pan, add oil/butter, add onions, ginger-garlic paste, green chilli paste. Then add wheat flour and roast for 2 minutes. Then add hot vegetable stock and milk. Keep stirring continuously till it thickens. Then add salt, cinnamon and peppercorns. Add water/stock if required. Then add all the boiled vegetables. Season with pepper and remove from flame. Top with grated cheese if you like.
