Mixed Vegetables with Paneer (Vegetables and Cottage cheese curry)

Ingredients:

200gms paneer (cottage cheese), cubed,

150gms carrots, diced,

2 capsicums, diced,

2 medium size onions, diced,

4 whole dry red chillies,

1 tsp jeera (cumin seeds),

1 tsp ginger-garlic paste,

1 tsp red chilli powder,

2 tsp vinegar,

6 tsp tomato sauce,

2 tbsp chopped coriander leaves,

Salt to taste,

Oil for tempering.

Mixed Vegetables

Method:

Heat oil in a pan on medium flame and add cumin seeds. When they splutter, add red chillies and onion and saute until onions turn reddish in color. Then add vinegar, chilli powder, ginger-garlic paste and fry for a minute. Now add all the vegetables and stir. Add very little water, cover and cook until they are tender. Then add paneer, tomato sauce and salt. Mix well, cook for a while and then garnish with coriander leaves. Serve hot with parathas or chapatis (Indian bread).

TIP:

You can fry the paneer cubes in some oil until slightly golden in color before adding them to the gravy.
