Egg Footlong

Ingredients:
1 footlong or French bread; cut into halves lengthwise,
3 eggs; beaten,
1 tomato; chopped,
1 onion; chopped,
1 capsicum; chopped,
1/2 butter,
Salt and pepper to taste,
Some parsley; chopped,
Cheese and Tomato ketchup as per taste.

Ingredients:
Melt little butter in a pan, add chopped onion, capsicum and tomatoes and let them fry till they become soft. Season with salt and pepper. Add chopped parsley. Pour the beaten eggs, cook while stirring continuously.
Meanwhile apply butter to the bread. When the egg mixture is ready stuff it in the footlong, top with capsicum, cheese and tomato ketchup and serve.
