Healthy Spinach Gravy

We usually prepare the same red gravy with onions, tomatoes or a white gravy with cashew nuts, melon seeds or a green gravy with coriander leaves. Here is a recipe for Spinach gravy, which is a healthy and good variation to the usual gravies that we prepare. You can add koftas, soya chunks, paneer, chicken, meat, mushrooms, fried potatoes, and so many other vegetables to this gravy.

Spinach is a rich source of iron. So now if your kids say no to spinach you know what to do, just prepare this gravy and add your kids favorite vegetables like potatoes, mushrooms, koftas or paneer and they will love it.

Ingredients: (Serves 2)
1 cup spinach puree*,
1 onion; finely chopped,
Salt and pepper to taste,
1/4 cup thick cream,
Little Oil for roasting.

Method:
Heat some oil in a pan and then add chopped onion to it. Saute until onion turns transparent and pinkish in color. To it add cream and cook stirring till the mixture starts leaving oil. Now pour the spinach puree and cook for 5 minutes. Season with salt and pepper.

* To prepare spinach puree, blanch fresh spinach leaves for few minutes and then grind them to a smooth puree.

Serving Suggestions:
Add any of the following ingredients and enjoy with spinach gravy
1. Paneer and Khoya Koftas.
2. Fried Paneer Cubes.
3. Fried Potato Cubes.
4. Lightly roasted mushrooms.
5. Boiled and fried egg.
