Yogurt and Mustard Sauted Potatoes

This is the simplest recipes of all that I have prepared so far. It takes less than 3 minutes to prepare. Fried potatoes with a tangy and sour taste of mustard and yogurt. Both blend well to give the bland potatoes a tingling flavor.

Ingredients:

4 medium size potatoes; halved and then sliced into long pieces,

1 tsp mustard paste or ground mustard seeds,

1 cup thick yogurt,

3/4 tsp paprika (ground red chilli),

Salt and pepper to taste,

Olive oil for frying.

Method:

Heat oil in a frying pan (to shallow fry) and then fry the potatoes until golden in color. Season them with some salt and pepper. Meanwhile in a bowl, combine yogurt, mustard paste, paprika and very little salt (since we have already seasoned the potatoes). Mix until smooth and even. Then add this paste to the same pan and mix the potatoes with yogurt mixture to coat them well. Saute well for few minutes and then transfer to serving bowl. Serve with herbed bread or Indian bread (chapati/paratha).
