Aloo Methi (Potato Fenugreek Vegetable)

A simple yet delicious and not to forget healthy vegetable recipe. Potatoes and fenugreek flavored with cumin, garlic, chillies, onions and tomatoes. A recipe that does not take much cooking time and is ideal for all you working ladies to carry in your lunch boxes.

Ingredients: (Serves 3-4)
1 bunch of methi (fenugreek) leaves; cleaned, washed and coarsely chopped,
2 large potatoes; diced into 1/2 inch pieces,
2 medium onions; finely chopped,
1 medium size tomato; finely chopped,
8-10 cloves of garlic; crushed,
1-2 green chillies; finely chopped or ground together with garlic,
1 tsp cumin seeds (jeera),
1/4 tsp turmeric powder,
Salt to taste,
Oil for tempering.

Method:
Heat oil in a kadhai, add cumin seeds and let them splutter. Then add garlic and green chillies and let it fry for a minute. Then add onion and saute till soft. Later add turmeric powder, stir and add potatoes. Stir, sprinkle some water (to cook potatoes) and cover and cook till potatoes are cooked but still firm. Uncover and cook till all the water evaporates. Then add methi leaves and mix. Cook uncovered for few minutes and then cover and cook till methi is tender. Uncover and transfer to a serving bowl. Serve hot with parathas or dal-rice.
