Alu Methi

Ingredients:
1 1/2 cup fresh methi leaves, cleaned, washed and coarsely chopped;
2-3 medium size potatoes; peeled and chopped,
1 small onion, diced,
1 tomato, chopped,
1/2 tsp jeera(cumin seeds),
2-3 whole dry red chilies,
1-2 cloves of garlic; crushed,
1/4 tsp turmeric powder,
1 tsp red chili powder(or to taste),
Salt To taste,
2-3 tbsp vegetable oil,
Water.

Method:
Heat oil in pan, add jeera(cumin seeds) and dry red chillies. When jeera splutters add garlic and let it brown. Then add onion and saute till transparent. Add potatoes and cook for 5 minutes. Then add tumeric, chilli powder and cook till potatoes are cooked. Add chopped tomato to this and cook till it leaves oil. Add 1/2 cup water, and methi and cook on a medium flame till done and till water is fully absorbed.
Serve with hot parathas.
