Badam Halwa (Almond halwa)
1 cup almonds, blanched and peeled,
1/2 cup almonds, with skin,
2 cups milk,
1 cup sugar,
2 tbsp ghee (unsalted butter),
1-2 tsp elaichi powder (green cardamom powder).
Grind the almonds to a coarse powder. Heat ghee in a non-stick pan on medium flame and roast almond powder till it turns golden brown. Stir continuously so that almonds get roasted evenly. Heat milk in another pan. Then add 3/4th cup of sugar (or as per taste) to the almond powder, keep stirring. When sugar dissolves, add elachi powder and milk and keep stirring. Cook stirring till milk reduces, and mixture leaves its pan’s edges. Garnish it with some dryfruits and serve.
