Bharli Bhendi (Stuffed Okra)

Ingredients:
100gms bhendi,
1 small onion; chopped,
1/4 cup dessicated coconut;
3-4 tbsp roasted groundnut powder,
2-3 tbsp yogurt,
1/4 tsp turmeric powder,
1/2 -1 tsp red chilli powder,
1/2 tsp garam masala,
Salt to taste,
Oil for frying.

Method:
Wash and pat dry the bhendi. Cut of the ends and then make a vertical slit (length-wise) to make space for the stuffing.
Heat 1 tbsp oil in a pan. Add the chopped onion, fry till it turns transparent. Drain and remove from pan. Now roast the
dessicated coconut till it is fragrant and light brown in color. Remove from pan. Now grind this onion alongwith coconut and little water to get a fine paste. Heat some more oil and add this paste to it. Fry this paste for a minute and add the groundnut powder to it. Let this fry for 2 minutes stirring continuously. Add all the spices and mix well. Remove from
heat and transfer to a plate. Add yogurt to this mixture and mix well. Add more salt if required. Now stuff this filling into the bhendis. Heat oil in a frying pan, place these stuffed bhendis in oil and fry them on low heat till they are cooked and nice golden in color.

This dish can be served as starter or a side dish.
