Cabbage Stir Fried with Coconut

Very simple yet unbelievably delicious vegetable recipe. With few ingredients it takes hardly 7-8 minutes to prepare this vegetable. This recipe is commonly prepared in Maharashtra and Southern parts of India.

Ingredients:

2 cups shredded cabbage,

1 cup + 2 tbsp freshly grated coconut,

1 green chilli; very finely chopped,

1 tsp mustard seeds,

1/2 tsp turmeric powder,

Salt to taste,

2 tbsp oil.

Method:

Heat oil in a kadhai (wok). Add mustard seeds and allow them to splutter. Then add turmeric powder and chopped green chilli. Roast for few seconds and then add cabbage to it. Cook stirring for 4-5 minutes. Now add grated coconut, salt and mix well. Cook for a while until cabbage is tender. Later remove from flame and serve with chapati, roti, or dal-rice.
