Caesar Chicken Salad

Ingredients:
250 gms boneless chicken breasts, boiled and diced,
1 tbsp mayonnaise,
1 tbsp Parmesan cheese, grated,
1 tbsp creamy Caesar salad dressing (optional),
1 tsp garlic, finely chopped,
2 tsp lemon juice,
5 Romaine or Iceburg Lettuce leaves,
Black olives, sliced (as per your taste),
2 tbsp chopped greens of spring onions (scallions),
Salt and pepper to taste,
Croutons.

Method:
Chill the lettuce leaves or put them in ice cold water for some time. Marinate chicken with lemon juice, salt and pepper for 30 minutes. Mix all the other ingredients in a bowl. You can choose to grill the chicken and them add it to the dressing or just mix it with the dressing. Serve the salad on lettuce leaves and top with croutons.

TIP:
If you are using the creamy Caesar Salad dressing, then avoid using mayonnaise and use more dressing.
