Cajun Chicken Sandwich

Ingredients:
2 chicken breast halves weighing approx 200gms,
1/4 cup chopped yellow or green bell pepper,
2 scallions (greens of spring onions), chopped,
3 tbsp Cajun seasoning,
Olive oil,
Handful of coriander leaves or celery, chopped,
Salt and pepper to taste.

For sandwich-
2 toasted buns,
Grated cheese.

Method:
Spread the cajun seasoning over the chicken breasts and let it marinate for some time.
Heat some olive oil in a pan and add bell peppers, scallions and cook for 2-3 minutes. Add the chicken with the seasoning
and mix well. Cover and cook till chicken is soft and tender. Then stir in the green onions, salt and pepper. Remove from
heat. Arrange between the buns and sprinkle cheese over it. Cover and serve with fries.
