Cheese and Egg Stuffing
Grated cheese as per your choice,
1 large onion, chopped,
4 green chillies, finely chopped,
2 tbsp chopped coriander leaves,
1/2 cup milk,
1/2 tsp cornflour,
Salt and pepper to taste.
Heat butter in a pan, add onion and green chillies and saute for 5 minutes on low flame. Beat eggs in a bowl, add milk, salt and pepper and mix well. Pour this mixture into the pan and mix using a spoon till the eggs get cooked. Add cornflour to the scrambled eggs, mix and remove from flame. Let it cool. Then add coriander leaves, cheese, salt and pepper if you want and mix.
This stuffing can be used in bread rolls, sandwiches, samosas, patties, ghujias, or even in dosas.
