Chicken Fajita Lettuce Wraps
1 pound or 500gms boneless chicken breasts; cut into strips,
6-8 iceberg lettuce leaves,
2 cup sliced peppers (red, green and yellow),
1 cup diced green onions,
1 cup Cheddar cheese,
1/2 cup Italian Dressing or any dressing of your choice.
1/2 tsp ground pepper,
1 tbsp Olive oil.
Marinate chicken with dressing, pepper, cover and set aside or an hour.
In a pan, heat olive oil and add onions and peppers and saute on medium flame for 3-4 minutes. Drain and set aside. In the same pan add chicken and cook the chicken.
To prepare the wraps, place a lettuce leaf, spread the chicken mixture, onion and pepper and sprinkle cheese and roll over.
