Chilli Prawns

Ingredients:
1kg medium size prawns,
2 tsp turmeric powder,
200ms dried red chilies,
1/2 tsp ground pepper,
2 onions, sliced,
2 tsp ginger paste,
1 tbsp tomato ketchup,
2 tbsp coconut milk,
2 tsp lemon juice,
2 tsp chopped spring onion,
Salt to taste,
1 tsp sugar,
Water.

Method:
Shell, devein and wash prawns. Marinate with salt, sugar, turmeric powder and ground pepper, for 30 minutes.
Remove stems of dried chilles and fry in oil over medium heat until dark brown and puffy. Remove chilies from oil and ground them to paste, using little water. Stir-fry onion slices in the same oil for 5 minutes. Add prawns and stir-fry until light brown, then add ginger, and tomato ketchup. Stir-fry for a few minutes, then pour 3/4 cup water and coconut milk. Cook until gravy thickens and add lemon juice and fried chili paste. Cover pan and simmer on very low heat. When the gravy is nice thick, remove from heat.
Garnish with chopped spring onions and serve with pulav, noodles or any chutney.
