Chocolate Meringue Pie
1 1/2 bars of unsweetened chocolate (approz 1 oz),
3/4 cup sugar,
5 tbsp cornflour or plain flour,
A pinch of salt,
1 1/2 cups milk,
1/2 tsp vanilla extract,
1/2 tsp chocolate essence,
2 egg yolks (save whites for meringue),
1 tbsp butter.
2 egg whites,
4 tbsp sugar,
A pinch of salt.
A 9 inch pie crust.
Combine together sugar, flour, salt, cocoa, eggs and milk in a saucepan and whisk well. Place it on flame and cook it on medium flame, stirring continuously until it thickens. It should take around 10 minutes. Then remove from flame and stir in butter and vanilla.
Using a fork prick the pie crust to make small holes. Then bake it at 350 degrees F (175 degrees C) for 15 minutes or until it is medium brown.
To prepare meringue, beat egg whites with salt till fluffy. Then add sugar and again beat till peaks are formed.
Now pour the chocolate custard into the pie, spread evenly, top with meringue. Bake for around 10 minutes at same temperature. Remove and either serve hot or chilled.
