Chocolate Sponge Cake

Ingredients:
70gms maida or seived wheat flour,
30gms cocoa powder,
100gms powdered sugar,
4 eggs,
1 tsp baking powder,
Chocolate essence,
Sheets of Butter Paper,
Butter or ghee,
Cake mould.

Method:
Beat eggs in a mixing bowl, add powdered sugar and blend using a hand blender. Add chocolate essence. Seive together maida, cocoa powder and baking powder. Add maida into this mixture into portions, to avoid lumps. Mix using the cut and fold method. In a mould, place butter paper, grease it with ghee or butter, pour the mixture into it, spread evenly. Preheat the oven at 180 degrees C for 5 minutes and then bake this cake at the same temperature for 30-35 minutes or till the cake has baked.
