Coconut Drop Cookies – Christmas Cookies

Ho! Ho! As Christmas is approaching its time to prepare our favorite cookies, cakes and so many goodies. Here is an all time favorite coconut drop cookie recipes. 

Ingredients: (Makes around 4 dozen cookies)
3 cups all-purpose flour,
3 cups shredded or dessicated coconut,
1 1/2 cup powdered sugar,
2 tbsp white butter (unsalted),
2 egg; beaten,
A pinch of salt.
1 tsp vanilla essence,
1 flat tsp baking powder.

Method:
Sift flour and baking powder. In a bowl beat white butter and salt till creamy. To it add beaten eggs and whisk well. Add half of dessicated coconut, mix again. Now add vanilla essence, mix and then fold in flour.
Preheat 180 degree C (360 degree F) for 15 minutes. Then make very small balls, dust them in the dessicated coconut to coat them well. Place on a greased cookie sheet or baking tray at a distance of 1 1/2 inches, giving them space to bake. Bake for 15 minutes or till cookies turn nice brown, at the same temperature.
