Cottage Cheese Puffs

Ingredients:

For the stuffing –

200 gms paneer; grated,

1 capsicum (green bell pepper), finely chopped,

1 tsp finely chopped green chillies,

1 tbsp finely chopped coriander leaves,

1 small onion, finely chopped,

1/2 tsp mustard paste,

1/4 tsp turmeric powder,

1/2 tsp red chilli powder,

1/2 tsp cumin powder,

1/2 tsp coriander powder,

Salt to taste,

1/2 tsp chaat masala,

Cheese; grated (as per choice),

Oil for roasting.

For the puff –

100 gms refined flour (all purpose),

100 gms butter or vanaspati; at room temperature + 2tbsp,

60 gms ice cold water,

Salt to taste,

Few drops of lemon juice.

Other –

Cooking spray or butter for greasing,

Milk for brushing.

Method:

Combine the ingredients for the puff and knead a dough. Cover the dough with a wet (damp) cloth and set aside for atleast 30 minutes.

To prepare the stuffing heat oil in a pan. When oil is hot add onion, and fry till it turns transparent. Then add mustard paste, green chillies, turmeric powder, red chilli powder, mix well and then add capsicum. Cover and cook for 2-3 minutes. Uncover and add paneer, salt, cumin and coriander powder, chaat masala, coriander powder and mix again, cover and cook for a minute. Add cheese, stir and remove from flame. Let the stuffing cool down a bit.

Meanwhile make even size balls of the flour, dust in little flour and flatten them with a rolling pin. Cut 3 inch size squares from them. Leaving around 1/2 inch distance from the edges, spread some melted butter on inner square. Place stuffing in the center of these squares and fold them diagonally to form triangles. Seal the edges with little water. Use a fork to seal them further (by pressing the teeth of the fork to flatten the edges). Preheat the oven at 350 D F (175 D C) for few minutes. Grease the baking tray with cooking spray or butter. Arrange the puffs in the baking tray
leaving some space between them. Bush some milk on top of the puffs and bake them at same temperature for 20-25 minutes or until they turn brown. You can also flip them once/twice in between and bake from both sides. Serve hot.
