Creamy Chicken Sandwich
2 cups chicken shreds, boiled and drained,
1/2 cup low fat mayonnaise,
Salt and pepper to taste,
8 slices of brown bread.
4-5 Lettuce leaves, washed in ice cold water and dried.
In a bowl mix chicken shreds, mayonnaise and season with salt and pepper. Mix well. Apply butter to all the slices of bread. Now place 4 slices on a plate and spread the chicken dressing over it, place a lettuce leaf and then cover with another buttered slice of bread. Cut diagonally into 2 or 4 pieces as you like. Prepare all the sandwiches similarly and serve with tomato ketchup.
