Cucumber Wadi (Sweet Cucumber Snack)

Ingredients:
1 cup grated cucumber,
1 cup fresh coconut, grated,
1/2 cup jaggery,
Ghee for frying,
Rava or suji (semolina) as per requirement for binding,
Dry fruits, crushed,
1/2 tsp elaichi powder (green cardamom powder),
A pinch of salt.

Method:
Mix cucumber, jaggery, coconut till the jaggery dissolves. Then add suji, mix well and keep aside so that suji absorbs the juices well.
After half an hour grease a cake mould or any other utensil with ghee and drop this mixture into it. Use a spoon the flatten and level the batter in the mould. Now steam this batter for 10-15 minutes in a pressure cooker. When the temperature drops down, remove the mould from the cooker and cut small wadis/pieces of the cake. When they cool down, transfer each wadi carefully in a plate. Meanwhile heat some ghee in a frying pan and fry these wadis till they turn golden brown.
