Eggless Rava Cake (Eggless Suji Cake)

Ingredients:

225gms rava/suji(semolina),

125gms + 1 tsp unsalted butter or ghee,

3-4 tsp sugar or as per taste,

100gms raisins,

1-2 tbsp broken cashewnuts,

1/2 tbsp baking powder,

2 tsp vanilla essence,

1/2 tsp elaichi powder (green cardamom),

260gms sweetened condensed milk,

260gms water.

Method:

In a non-stick pan, melt 125gms butter and add rava to it. Mix well and roast rava for few minutes till it turns light brown. Do not burn. Meanwhile in a bowl mix condensed milk with water, add sugar and whisk it. Then add raisins to it.

When rava is roasted, add it to the milk mixture and mix well so that no lumps are formed. This batter should have a pouring consistency. Add baking powder, illaichi powder and essence to it and mix well. Keep this batter aside for 20 minutes to let rava soak well with the milk. Later preheat oven at 300 degrees for 3 minutes. Grease a cake mould with some butter, pour the batter into it, spread well, sprinkle cashewnuts and bake it at 300° F (approx 150° C) for 10 minutes or till the cake is done. Serve at tea time.
