1/2 cup chopped oranges,
1/2 cup chopped carrots,
1/2 cup chopped apples,
1/2 cup chopped tomatoes,
1/2 cup mushrooms, washed, cut into halves and blanched,
1/4 cup chopped spring onion,
1/2 cup chopped green bell pepper (capsicum),
1/2 cup chopped yellow and red bell pepper,
8-10 Lettuce leaves,
1 tbsp raisins or as per choice,
1 tsp almonds, chopped,
For the dressing-
2 tbsp low fat mayonnaise,
1 tbsp tomato ketchup,
1/2 tsp Italian seasoning or ground black pepper,
1/4 tsp red chilli flakes.
In a big salad bowl, mix all the vegetables, fruits and all the dressing ingredients. Mix well but lightly. Chill the salad in the
refrigerator. Before serving sprinkle raisins and almonds.
Blanching mushrooms – Heat very little butter in a pan, and saute the mushrooms only enough to cook them.
You can add roasted almonds to the salad.
