Fresh Tomato n Herb Pasta with Cheese
250gms Pasta (of your choice),
10 ripe plum tomatoes, chopped,
2 cloves of garlic, crushed,
1/4 cup Of fresh herbs (oregano, basil, parsley, mint etc.) chopped,
1/4 tsp red chilli flakes,
2 tbsp olive oil,
Salt & Pepper to taste,
Parmesan or Pecorino cheese.
In a bowl, mix the tomatoes, garlic, fresh herbs, olive oil, chilli flakes, salt and pepper. Seal the bowl with cling paper and set this mixture for anything between 30 minutes to 6 hours, the more the better, to allow the flavors to blend. Just before serving, cook the pasta until it is ‘al dente'(soft but not overcooked). Drain and mix with the sauce. Transer to the serving plate and garnish with grated cheese on the top.
