Fresh White Beans Masala

Ingredients:

300-350 gms beans; boiled until almost cooked,

2 onions; finely chopped,

1 large tomato; finely chopped,

1-2 potatoes; diced,

1/2 tsp cumin seeds (jeera),

1/4 tsp turmeric powder,

1/2 tsp red chilli powder,

1/2 tsp ground cumin,

1 tsp ground coriander,

1 tsp garam masala,

1/4 cup chopped coriander leaves,

Salt to taste,

Oil for frying,

Water.

Method:

Heat oil in a pan and add cumin seeds. When they splutter add onion and saute until soft. Then add tomatoes and cover and cook until they become soft. Then add turmeric, red chilli powder, ground cumin and coriander and garam masala. Cover and cook until the masala starts leaving oil. Then add potatoes and some water. Cover and cook for 2 minutes. Then add the boiled beans, add water if required, cover with lid and cook until potatoes and beans are tender. Add salt, chopped coriander leaves, stir, cover and cook for 3-4 minutes. Serve with chapatis or any Indian bread.
