Garlic Chicken

Ingredients: (Serves 4)
4 boneless, skinless chicken breast,
1 egg white,
1 tbsp cornflour,
1 tbsp dry white wine or sherry,
4 spring onions, sliced and greens chopped diagonally,
4 tsp crushed garlic,
2 tbsp vegetable oil,
1 tsp sesame oil.

Sauce-
1 tsp red chili paste,(or as per taste)
2 tsp sugar,
1 tsp cornflour,
2 tbsp soy sauce,
2 tsp vinegar,
2 tbsp dry white wine,
1 tbsp water.

Method:  
Place chicken breasts in freezer for an hour or till the chicken is firm. Firm chicken is easier to cut, so cut the chicken into thin shreds. In a small bowl, beat egg white, mix in cornflour and white wine and stir until cornflour is dissolved. Add chicken to this mixture and mix well to coat all pieces. Let the chicken marinate for atleast 30 minutes. Meanwhile mix all the ingredients of sauce, mix well. Heat oil in a wok(kadhai) or a frying pan, and fry chicken until it changes it olour. Remove chicken and drain all the oil. Then add onions and garlic to wok and fry for a minute. Add fried chicken to wok, stir the sauce and add to it. Cook, stirring continuously, until mixture boils and thickens. Remove from flame and toss in some sesame oil. Serve hot with plain noodles or steamed rice.
