Hawaiian Chicken Salad

Ingredients:
500gms boneless chicken; cut into pieces,
1 carrot,
4 pineapple slices,
1 small head cabbage,
2 small capsicums (green bell peppers),

For the dressing-
4 tbsp cream,
4 tbsp mayonnaise,
2 tbsp lemon juice,
Salt to taste.

Method:
Boil the chicken and shred into small pieces. Chop all the vegetables into small pieces. In a bowl mix cream, mayonnaise, lemon juice and salt and whisk well. Mix chicken with the vegetables and pour the dressing over it. Serve in lettuce leaves or a bowl and decorate it with sliced tomatoes and
cucumber if you like.
