Irish Almond Cake (For St. Patrick’s Day)

Ingredients:
1 plain white cake mix,
1 packet vanilla instant pudding mix,
1/2 cup vegetable oil,
1/2 cup water,
1/3 cup + 1tbsp Irish whiskey,
4 large eggs,
1 cup finely chopped silvered almonds,
1 tsp lemon zest,
1 cup confectioners sugar,
2 tbsp fresh lime juice,
1/2 tsp green food color.

Method:
Preheat the oven to 350 Degrees F (175 Degrees C). Grease a cake pan. In a mixing bowl, combine cake mix, pudding mix, oil, beaten eggs, whiskey, green food color and water and blend using an electric blender on low speed for a minute. Then increase the speed and blend for further 2-3 minutes. Now fold in almonds and lemon zest and pour the batter into the greased pan. Bake at the same temperature for over 45-50 minutes.
For the glaze; mix together confectioners sugar, lime juice and 1 tbsp whiskey and stir till sugar is dissolved and the mixture is smooth. Drizzle over the cake when cake is cool.
