Kadhai Bhindi aur Aloo (Stir fried Okra with potatoes)

Ingredients:

400 gms bhindi (okra); washed, dried and cut vertically into two pieces,

3-4 small potatoes; cut into long pieces and parboiled,

4-5 cloves of garlic; crushed,

1 large onion; halved and sliced,

2 tbsp tomato puree or tomato ketchup,

1/2 tsp red chilli powder,

1 1/2 tsp coriander powder,

1/2 tsp garam masala,

1 tsp kasoori methi (dried fenugreek leaves),

Salt to taste,

Oil for frying.

Method:

Heat some oil in kadhai (wok) and fry the okra in batches until cooked and golden brown in color. Drain and set aside. Fry the potato fingers until light brown and crisp.

Then add some more oil to the kadhai for frying the onions. Add garlic and let it fry until fragrant. Then add onions and saute them until soft and transparent. Then add tomato puree and cook for a minute or two. Then add all the spices, stir and cook for a minute. Now add fried okra and potatoes, sprinkle salt and kasoori methi. Cover and cook for few minutes. Transfer to serving bowl and serve with parathas or dal-rice.
