Mango Sheera (Mango Halwa)

Ingredients:
2 cups rava or sooji,
Pulp of 2 mangoes,
1 1/4 cup boiling hot milk,
1 cup sugar,
1/2 cup pure ghee,
1 tsp elaichi (green cardamom) powder,
Chopped dry fruits (cashew nuts, almonds, raisins, etc) as per taste,
Few strands of saffron (kesar).

Method:
Heat a kadhai (wok) add 1/4 cup ghee and roast rava on a low flame till it is fragrant its color is very light brown. Do not roast till they change their color totally, in that case rava will give a burning smell. Add a cup of hot water to the milk, mix and add to the rava. Mix, cover and cook for few minutes. Uncover and add mango pulp, sugar, elaichi powder and dry fruits. Stir and cover for 5 minutes. Mix saffron with little milk, add to the sheera and heat till sheera thickens. Serve hot.
