Mathri (Flaky Crackers)

Ingredients:
1 cup whole wheat flour,
1/2 cup maida (refined wheat flour)
1/4 cup fine rava or sooji (semolina),
1/2 tsp ajwain (carom seeds),
1/4 tsp crushed peppercorns,
1/4 tsp salt,
1 flat tsp baking powder,
3 tbsp melted ghee (butter),
Cold water to knead dough,
Oil for deep frying.

Method:
Sift flours, salt and baking powder. To that add sooji, crushed pepper, ajwain and melted ghee. Rub with your palm to mix well. The mixture would be like bread crumbs. Then using water knead a stiff dough. Cover with a cling film or a damp cloth and let it aside for around 30 minutes.
Then make small balls and roll out small flat rounds. Heat oil for frying in a kadhai (wok) on a medium flame. Fry few mathris at a time on low-medium flame till they turn light golden brown. Drain on paper towels and let them cool. You can store these mathris in an airtight container for 3 weeks.
