Mix Vegetable Curry

Ingredients:

1 1/2 cups cauliflower florets,

2 carrots; diced,

3/4 cup shelled green peas,

3/4 cup paneer (cottage cheese) cubes,

1 onion; very finely chopped,

1/2 tomato; finely chopped,

1 tsp cumin seeds (jeera),

1 tsp ginger-garlic paste,

1/4 tsp turmeric powder,

3/4 tsp red chilli powder,

1/2 tsp garam masala (meat masala if available would be the best option),

Salt to taste,

1 tbsp fresh cream,

Oil for tempering.

Method:

Heat oil in a deep pan. Add cumin seeds and onion. Saute until onion becomes soft. Then add ginger-garlic paste and roast for few minutes. Add turmeric powder, red chilli powder and fry for few more minutes. Then add chopped tomato, garam masala and stir. Cover and cook until the masala starts releasing oil and tomato softens. Then add cauliflower, carrots, green peas and paneer, add water to prepare curry and cover and cook until vegetables are tender. Add salt, stir and remove from flame. Then add cream, mix well and serve with parathas, chapatis or naan.
