Moong Dal Vadas (Green Gram Dumplings)

These small moong dal vadas are easy to prepare and taste damn good. They can be served as a tea-time snack or even with your meal.

Ingredients:

1 cup split moong dal (without skin); washed and soaked for over 2-3 hours,

2 green chillies or as per taste,

1 tsp coarsely ground coriander seeds,

2 tbsp finely chopped coriander leaves,

Few curry leaves; freshly chopped,

Salt to taste,

2 pinches of soda bicarb,

1 tbsp + Oil for deep frying.

Method:

Grind the soaked dal with little water to form a thick paste. To it add all other ingredients including a tbsp of oil. Heat oil for deep frying in a kadhai, Drop a very small portion of batter into it to test if oil is hot. It should rise immediately to the top of the oil and should not sink to the bottom. This is the right temperature, reduce the flame to medium and then drop small vadas into the oil in batches. Fry them at a golden color and serve with sweet and sour tamarind chutney or tomato ketchup.
