Mutton Do Pyaza (Meat with onions)

Ingredients:
500gms mutton (goat or lamb),
2 large onions,
1 cup beaten curd,
2 tbsp ginger-garlic paste,
2-3 red chillies,
1 tsp red chili powder,
1 tsp cumin (jeera) powder,
1 tbsp coriander (dhania) powder,
2 tsp chopped coriander leaves,
Salt to taste,
Oil for frying.

Whole Garam Masala-
5 -6 cloves (laung)
4 cardamoms (badi elaichi),
1 tsp turmeric powder,
1″ cinnamon stick (dalchini),
1 tsp mutton or garam masala,

Method:
Wash and clean the mutton pieces. Marinate them with 2 tbsp curd, turmeric powder, red chilli powder, 1 tbsp ginger-garlic paste and some salt for 1 hour or more. Combine, 1 onion, red chillies, cumin powder and grind to a smooth paste. Slice the other onion. Heat 4-5 tbsp oil in a pan, fry the sliced onion till it turns transparent. Drain and set aside. In
the same pan, add the whole garam masala and fry for 2 minutes, then add ground paste, ginger-garlic paste and cook for 5
minutes. Now add the marinated mutton, mix and cook for 5 more minutes. Now add the coriander powder, red chilli powder, mutton masala and remaining curd, mix well, cover and cook on a low flame till mutton is soft and tender. Stir and mix at regular intervals. Uncover and cook till it is dry. Garnish with chopped coriander leaves.
