Orange flavored Apple Fritters

Ingredients:
2 cup apples; diced into cubes,
2 eggs; beaten,
2 cups milk,
1/2 cup sugar,
2 tsp orange rind,
1/2 cup orange juice,
2 tsp vanilla extract or essence,
A pinch of salt,
4 cups all-purpose flour (Maida),
2 tbsp baking powder
Oil,
Confectioner’s sugar to garnish.

Method:
Sift together flour and baking powder. In a bowl, combine all the other ingredients except oil and confectioner’s sugar.
Add the flour to this mixture and fold well until a batter of dropping consistency is formed.
Heat oil in a wok on high flame. Then lower the flame to medium and drop small portions of batter into the oil. Fry till
deep golden color by flipping over, drain and transfer to serving plate. Sprinkle the confectioner’s sugar and serve.
