Paneer Butter Masala

Ingredients:

250gms paneer cubes,

2 onions, ground to paste,

1 tomato, pureed,

2 tsp ginger-garlic paste,

2 tbsp cashewnut powder,

1/2 tsp turmeric powder,

1-2 tsp red chilli powder, (as per taste)

2 tsp kasoori methi (dry fenugreek leaves),

1 tsp roasted jeera powder (cumin powder),

1 tsp garam masala,

1/2 tsp sugar,

1/2 cup cream,

2 tbsp butter,

2-3 tbsp oil,

Few drops of orange food color,

Salt to taste,

1 tbsp chopped coriander leaves and some fresh cream to garnish.

Method:

Heat some butter in a frying pan and fry paneer cubes at a golden brown colour. Keep them aside. In the same pan, add butter and fry the onion paste till light brown in colour. Add ginger-garlic paste, turmeric powder, chilli powder and cashew powder. Cook for 2 minutes and add tomoto puree to it. Fry it thoroughly. Add cream, salt, sugar orange food color and garam masala and mix well. Bring to boil and then add paneer pieces and kasoori methi (dry fenugreek leaves) to it and cook for few minutes. Garnish it with chopped coriander leaves and some fresh cream. Serve hot with naan, roti, puri or even pulao.
