Paneer Kachori

Ingredients:
For the cover(dough)
250gms Maida(Seived Flour),
1 tbsp ghee,
1/2 tsp baking powder,

For the filling-
2 tbsp curd(yoghurt),
100gms paneer(cottage cheese),
1 tbsp besan(gram flour),
1/2 tsp garam masala,
1/2 tsp coriander powder,
1 tbsp saunf(fennel),
1 medium size onion, finely chopped,
1/2 tsp red chilli powder,
Salt to taste,
Oil (for frying the stuffing and the kachoris).

Method:
In a large mixing bowl, mix maida, ghee, curd and baking powder and knead a dough with warm water; of a rolling consistency. Cover the dough and leave it aside for about half an hour.
Heat little oil in a pan and add chopped onion and besan and fry till it leaves a fragrance*. Then add mashed paneer, garam masala, saunf, coriander powder and red chilli powder, mix well and cook for some time. Remove from flame and let the filling cool down a bit. Roll out small puris and fill each puri with the filling, close the puri by sealing its mouth and give it a shape of a kachori.
Heat oil in a kadhai on a high flame, then reduce the flame to low(sim) and slowly fry the kachoris at a golden colour. Serve with sweet tamarind chutney or with tomato ketchup.

* NOTE: Donot fry besan till it changes its colour, else it will leave out a burnt smell.
