Paneer Kadhai in just 15 minutes

This recipe of Paneer Kadhai or Kadhai Paneer, is a quick and simple recipe that can be prepared in just 15 minutes. With minimum ingredients that are readily available, this dish is finger-licking good. You can prepare it for you dinner party or for your kitty.

Ingredients:

200 gms paneer (Cottage cheese); cut into small cubes,

3 onions; sliced and rings separated,

1-2 capsicum; halved and thinly sliced,

2 tsp freshly ground ginger and garlic,

2-3 tbsp readymade tomato puree,

1 cup thick yogurt,

2 tsp kasoori methi (dry fenugreek leaves); crushed,

Salt and sugar to taste,

4-5 tbsp oil for frying.

Masala-

2 dry red chillies,

4-5 peppecorns (kali mirch),

1 tsp cumin seeds (jeera),

1 1/2 tsp coriander seeds (dhania dana),

A pinch of fenugreek seeds (methi dana).

Method:
To prepare the masala – dry roast all the ingredients of the masala and let them cool down before you grind it to a fine powder.

Heat oil in a kadhai. When hot add onion rings and saute till they turn transparent. Then add ginger-garlic paste, capsicum and cook till it is tender. Then add the ground masala made above and cook for few minutes, stirring occasionally. Then add tomato puree and cook till oil starts separating from the mixture. Pour in the yogurt and mix well. Now add the paneer cubes, mix thoroughly to coat them well in the mixture. Season with salt and sugar, cover and cook for 2-3 minutes on low-medium flame. Uncover, add kasoori methi, cover with a lid and turn off the flame. After few minutes, transfer to a serving bowl and serve hot with parathas or naan or butter roti (Indian bread).
