Pani Puri

Ingredients:
Puffed puris(as required),
4 cups Tamarind,
1 cup pudina(mint leaves), ground to paste,
4 cups Water,
1/2 cup chopped coriander leaves,
1 tsp red chili powder,
1 tsp jeera(cummin seeds) roasted & ground to powder,
1 tsp black pepper,
1 cup sprouted moong(green gram),
Jaggery (as per taste),
Salt to taste.

Method:
Boil the tamarind in the water till soft. Strain. Add jaggery and mix well. Add some water if required.
In a bowl, mix pudina (mint) paste and water to dilute it. Add the spices, salt and chopped coriander leaves. 
Make a small hole in each puri and stuff it with some moong sprouts. Dip each puri in the tamarind chutney and pudina chutney and eat immediately.

TIP: You can make variations with the stuffing.
1. Stuff ragda
2. Stuff alu mixture – Mix boiled and mashed potatoes with chat masala, red chilli powder and salt.
3. Simply stuff boondi.
