Potato Toast

Ingredients:
2 slices of brown or white bread,
1 large potato, boiled, peeled and mashed,
1 green chilli, finely chopped,
2 tbsp chopped greens of spring onion,
1 tbsp chopped coriander leaves,
1 tbsp chopped onion,
2 tbsp cornflour, (for binding),
1 egg,
Salt and pepper to taste,
Sesame seeds for coating,
Oil for frying.

Method:
Beat the egg in a bowl, add some salt and pepper and beat well. Spread some sesame seeds on a plate. Heat around 1/2 cup oil in a frying pan. Cut each bread slice into two triangles. Mix all the other ingredients in a bowl and knead it into a soft dough. Divide this dough into 4 portions and spread each portion on the bread pieces. Then dip each piece in the egg and then in the sesame seeds and fry in the oil from both sides till it turns golden and crisp. Serve potato toast with sweet chilli sauce.
