Quick Margherita Pizza

Ingredients:
1 12″ pizza crust,
4-5 plum tomatoes; chopped,
2 plum tomatoes; thinly sliced,
1 onion; chopped,
1 clove of garlic; minced,
2 tbsp + 1 tsp extra-virgin olive oil,
1 tsp balsamic vinegar,
1/2 cup fresh basil leaves; roughly chopped,
Salt and pepper to taste,
A pinch of white sugar,
1 cup Mozzarella cheese; shredded.

Method:
To prepare the sauce:
Heat oil in a pan on medium flame. Add onion and garlic and saute till onion becomes soft. Then add tomatoes, sugar, salt and pepper. Cover and cook for few minutes. Uncover and mash the tomatoes with the back of a wooden spoon. Let it simmer on low flame till the sauce thickens. Remove from flame, let it cool and then grind to paste.
Combine 1 tsp olive oil with vinegar. Now spread the sauce over the pizza crust, evenly till the edge, place the tomato slices, sprinkle the oil and vinegar mixture, basil leaves and plenty of cheese. Bake at 400° F (200° C) for 10-12 minutes. Cut into 8 slices and serve hot.

can we make this pizza without oven..

Yes Bharat, you can make this pizza over a skillet (tava) with little bit of efforts and skill. Place the topped pizza base/bread on the hot skillet on high flame for 2 minutes. Then flip over and cover and cook on medium flame only until the cheese melts and small brown spots start appearing on the toppings. Uncover and flip over (you can also use another pan/skillet for flipping over) and then let the base cook properly on medium flame, so that it doesn’t burn but the pizza bread is cooked thoroughly. An undercooked or overcooked pizza bread will spoil the pizza. Try it out and do let us know.
