Quickly Marinated Mushrooms
A quick snack/appetizer yet with lots of natural flavor and aroma.
200 gms fresh mushrooms; halved,
2 tbsp ground onion,
2 tbsp finely chopped spring onions,
Juice of 1 lemon,
1-2 tsp oregano,
1 tsp dried parsley,
1 tsp minced garlic,
2 tbsp olive oil,
Salt to taste.
Blanch the mushrooms and drain. Meanwhile in a bowl whisk together all the ingredients and toss the mushrooms to coat well. Serve immediately.
