Russian Salad

Ingredients:
250gms salad potatoes,
1/2 cup of green beans, cut in small slant pieces,
1/2 cup of carrots, cubed,
1/2 cup of peas,
1 small red pepper, diced,
Pickled cucumber, cut into cubes,
1 tsp of capers, (optional)
2 finely chopped anchovies ( optional ),
Light mayonnaise, enough to dress the salad or as per taste,
1/2 cup cream,
1/2 tsp vinegar,
Salt and pepper to taste.

For garnishing-
Lettuce leaves, cherry tomatoes, boiled egg (sliced),chopped cilantro or coriander leaves.

Method:
Boil the potatoes, peel and dice into small cubes. Boil all the other vegetables too. Let all the vegetables cool at room temperature. In a mixing bowl, mix all the vegetables, add salt, pepper, vinegar, cream and mayonnaise and mix well to coat all the vegetables. Cover the bowl with a cling film and keep it in the refrigerator for at least an hour. Serve the salad on lettuce leaves and garnish with cherry tomatoes, egg slices and chopped cilantro.
