Sausage and Mushroom Calzone

Ingredients:
150gms or 5 ounces pizza dough,
6 pork or chicken sausages,
1 cup sliced mushrooms,
Red chilli flakes or paprika to taste,
1 small onion; chopped,
1 cup Mozzarella cheese; grated,
1/2 cup Cheddar or Ricotta cheese; grated,
Salt to taste,
Oil for frying and brushing.

Method:
Heat little oil in a pan and fry the sausages till done. Drain. In the same oil fry onion and mushrooms till mushrooms are tender. Meanwhile chop the sausages/crush them and transfer to a mixing bowl. Sprinkle some paprika or chilli flakes and salt and stir well. Remove from flame and mix together with sausages. Now add Mozzarella and Ricotta/Cheddar to it and mix well.

Now take small portions of dough and roll into flat and around 12-14 inch square. Then cut this square into 4 even squares. Hold down a corner and fill in little stuffing into it, in order to fold it diagonally to form a triangle. Seal the edges well by pressing a fork into it. Prick the calzone with the same fork to allow the steam to escape. Similarly prepare all the calzones and place them into a greased baking tray, brush little oil on it and bake for 12-15 minutes or till the curst turns light brown.
