Soya Nugget Cutlets

Ingredients:
1/2 cup soya nuggets,
2 large potatoes; boiled, peeled and mashed,
1/2 cup spring onion greens; chopped,
2 tbsp chopped coriander leaves,
1 tsp ginger-garlic paste,
1-2 green chillies; finely chopped,
1/2 tsp jeera (cumin) powder,
1 tsp dhania powder,
1/2 tsp red chilli powder,
1/2 tsp garam masala,
Salt to taste,
1/2 tsp lemon juice,
Oil for frying.

Method:
Soak the soya nuggets in water only enough for it to cook and cook in a microwave for 5 minutes. Drain and squeeze out excess water if any. Add all the other ingredients to it except oil and knead a soft dough.

Heat oil in a pan (you can choose to deep fry these cutlets in a kadhai or wok) make small cutlets of the dough and fry them on medium flame till they turn golden brown on each side. Serve with mint chutney, green chutney, tomato ketchup or sweet chilli sauce.
