2 cups sweetcorn,
1 small onion, finely chopped,
2 tbsp finely chopped coriander,
1 tsp red chilli powder,
Juice of 1/2 lemon,
1 tsp chat masala,
Salt to taste,
Oil for frying
Boil the sweetcorn in some water. Add 2 pinches of salt to this water. Drain out water from the corn.
Heat some oil in a kadhai. Put the onion and fry for just 1 minute on high heat. Keep frying continously to avoid onion from getting burnt. Reduce the flame to medium and add red chilli powder, fry for half a minute, then add the corn. Now add some salt*, lemon juice, chat masala and mix well. Add chooped coriander and serve hot.
* We boiled the corn in salted water, so add very little salt later in the recipie.
TIP: Add mint and coriander chutney to give it a different taste.
