Spicy Mexican Tomato Salsa

Ingredients:
2 cups chopped tomatoes,
2-3 spring onions with greens, chopped,
A bunch of fresh cilantro, chopped
6 cloves garlic, chopped,
1 long green chilli, chopped,
1/2 tsp red chilli flakes,
1 jalapeño, finely chopped (optional)
Salt and pepper to taste,
Mixed herbs to taste (optional),
1 tbsp lime juice,
Olive oil.

Method I:
Mix all ingredients together in a bowl and cover with a cling film. Refrigerate for few hours for maximum flavor.

Method II:
Heat some olive oil in a pan on low flame, put green chillies and add garlic, when they are aromatic add onion, saute for 2 minutes on low flame. Then add tomatoes and all the seasonings, mix, cover and cook till tomatoes are soft. Serve with corn chips or tortillas.
