Ingredients:
400gms fresh spinach leaves; finely chopped,
100gms fresh coriander leaves; finely chopped,
3/4 cup skim cottage cheese,
3/4 cup grated Parmesan cheese,
3 large eggs,
4-5 cloves of garlic, minced,
1-2 green chillies; very finely chopped,
Salt and pepper to taste.

Method:
Preheat the oven to 350°F. Meanwhile mix together all the ingredients (reserve some Parmesan cheese to garnish). Grease a baking tray or muffin cups with the cooking spray. Pour this spinach mixture into it and bake for 20-25 minutes. Let it be in the oven for few minutes before you remove. Then let it stand for few minutes at room temperature. Demold and cut into desired size pieces (if prepared in the pan), garnish and serve.
