Sui Mai (Chicken and Shrimp dumplings)

Ingredients:
20 Wonton Wrappers,

Filling-
1/2lb or 200gms chicken or pork, minced,
1/2lb or 200gms shrimps, finely chopped,
1/4 cup shitake mushrooms,
5 green onions, sliced,
3 cloves garlic, minced,
1 tsp grated ginger,
3 tbsp soy sauce,
2 tbsp dry sherry,
1 tbsp sesame oil,
1/4 tsp white pepper,
1 tbsp cornstarch,
2 tsp sugar,
Salt to taste.

Method:
Mix together all the ingredients for the filling. Place about 2 tsp of filling in the center of each wonton wrapper, wet the edges and pinch frills in shape of flower and seal. Heat water in a steamer upto a level keeping a distance of about an inch from the steamer tray. Place all the sui mai into the tray, place in the steamer, cover and cook for about 25-30 minutes on a medium-high flame. Transfer to the serving plate and serve with red chilli sauce or chutney.
